A racing simulator gives a holiday party something to do besides stand at the bar. The ideas that work: a "Holiday Grand Prix" with department teams, a festive theme for the rigs and leaderboard, small prizes, and a final at a set time that the whole room can watch. Book early, because December in Miami is busy.

Holiday Grand Prix
Each department enters a team. Teammates drive back to back and their combined lap times decide the winner. Hand out a trophy, or let the winning team pick the charity for the company's holiday donation.
Theme the race

Ugly-sweater qualifying
Anyone in a holiday sweater gets an extra practice lap. It costs nothing and gets people talking.
Leaders vs. team

If your party includes families, run an afternoon session before the evening event. For kids, the CDC notes that motion sickness peaks between ages 7 and 12, so keep their turns short and let them step out whenever they like.
Plan around the bar
SHRM's advice on surviving the office holiday party includes limiting alcohol, for example with a two-drink ticket system, arranging rides home, and planning activities so the party is not only about drinks. A simulator competition is that kind of activity. Agree with HR on whether anyone who has been drinking can take a turn, and say so up front.
Keep it inclusive too: invite people to watch and cheer as well as drive, so no one feels pushed to compete.
Timing in Miami

On taxes, IRS Publication 463 lists recreational expenses for employees, such as a holiday party, among the exceptions to the general rule that entertainment is nondeductible.
